Founded in 2025 by Tashkeel, the UAE’s renowned art and design studio and gallery, Gerbou was launched under the direction of Tashkeel’s Founder & Director, Sheikha Lateefa bint Maktoum bin Rashid Al Maktoum. Nestled in Nad Al Sheba 1, Gerbou embodies the spirit of collaboration, heritage, and innovation, bringing together food, art, and community to celebrate contemporary Emirati identity.

The jury members of the World Business Outlook were impressed by Gerbou’s approach to the convergence of food, art, and community, and awarded the restaurant two honours: “Excellence in Emirati Cuisine – UAE 2026” and “Most Innovative Restaurant Concept – UAE 2026.”

At the heart of this farm-to-table restaurant’s philosophy lies a deep respect for nature’s cycles and local traditions. Its menus are crafted around seasonality, ensuring that ingredients are served at their peak flavour and nutritional richness. This approach reduces reliance on imports, supports local farmers, and celebrates the natural lifecycle of produce. Equally important is simplicity – its culinary ethos emphasises the purity of ingredients, allowing their natural essence to shine without unnecessary embellishment. The third pillar, locality, anchors the restaurant’s identity by sourcing from nearby farms and artisanal producers, strengthening ties between diners and the land while uplifting the regional economy.

This Gourmet Restaurant’s cuisine is a refined reimagining of Emirati heritage, inspired by the Silk Route’s exchange of ideas and flavours. Elements such as the heritage “Dubai Pattern” breeze block behind the bar evoke vernacular architecture, while fluid forms and tactile finishes harmonise indoor and outdoor spaces. Rich hues of amber, emerald, and teal accentuate neutral tones, reflecting the vibrancy of the UAE’s landscape.

Soon after, Balaleet takes the stage, its sweet vermicelli noodles crowned with a savoury omelette, a perfect play of contrast. The warmth continues with Khameer with Honey and Cheese, bread fresh from the oven, airy yet substantial, carrying the richness of local honey and melting cheese. Then comes a daring interlude: Date and Burrata on Sourdough, a cross-cultural pairing of creamy burrata and regional dates on rustic sourdough. For those seeking vitality, protein pancakes offer a modern lift, brightened with cardamom cream and blueberry sumac jam.

As the day advances, the narrative shifts toward community dining and theatrical flair. The Mezze Board sets a collaborative tone, a colourful spread of dips and starters. The Corn on Corn (Live Trolley) injects performance into the meal, prepared tableside with playful textures. Then the classics arrive: Chicken Machboos, slow-cooked poultry resting on saffron rice, and Chicken Kabsa, another rice masterpiece layered with warm spices. The story deepens with Lamb Mtabban, tender and slow-cooked to perfection, before reaching its smoky crescendo in the Gerbou Mixed Grill, a feast of charred meats.

The design of Gerbou is deeply symbolic, with every element crafted to tell a story about Emirati traditions. The reception desk and chairs are made from naturally fallen Ghaf trees, a protected desert species that symbolises resilience and sustainability. The door handle incorporates motifs of the palm, desert, and ocean, while fish-scale lighting fixtures reference the sea. Tables carry Sadu weaving patterns, a nod to Bedouin heritage, and partitions are inspired by traditional fishing nets but reimagined with modern sustainable fibres. Even the chandelier is unusual, crystallising dried foliage inside glass to preserve nature in art.

This fusion of materials continues throughout the venue, where dried palm branches form screens and local crafts are seamlessly integrated into contemporary design. The collaboration with Tashkeel, an art consultancy, ensures that Gerbou functions as both a restaurant and an art gallery. It is a living archive of Emirati craft, memory, and storytelling.

The culinary experience is equally distinctive. The menu highlights family recipes and traditional local dishes such as chicken machboos, presented not just as food but as cultural storytelling.
